Tim Duval, winemaker and son of legendary former Penfolds Chief Winemaker John Duval, visits Hong Kong in person to share the philosophy behind one of Barossa Valley's most celebrated boutique estates.
Taste six wines spanning elegant Rhône whites to flagship old-vine Shiraz, paired with a cheese platter.
—
🍷 The Wines
• John Duval Plexus MRV 2024 — Marsanne, Roussanne & Viognier blend.
• John Duval Plexus SGM 2022 — Classic Rhône-style blend
• John Duval Entity Shiraz 2022 — Multi-vineyard old-vine Shiraz blend with 15+ years cellaring potential.
• John Duval Annexus Grenache 2024 — Century-old vines, ultra-low yield, limited vintage-only release.
• John Duval Eligo Shiraz 2021 (RP96) — The flagship. A quintessential Australian Shiraz.
• John Duval Integro Cabernet Shiraz 2016
—
🏛️ About the Producer
John Duval was Chief Winemaker at Penfolds for 29 years, the mastermind who elevated Penfolds Grange to world icon status. His 1976 Grange received a perfect score from Robert Parker; his 1990 vintage was named Wine of the Year by Wine Spectator. In 2003, he stepped away to establish his own eponymous label in Barossa Valley, focusing on old-vine Shiraz and Rhône varieties with minimal production and maximum precision. Favouring French oak over the American barrels of his Penfolds days, the wines reveal a rare elegance and structure for Barossa. James Halliday 5-star rated, Entity Shiraz earned "Shiraz of the Year" (JH99), and the debut Plexus SGM entered the Wine Spectator Top 100. In 2016, son Tim joined the estate, continuing the family's pursuit of depth, finesse, and old-vine expression.

🏛️ About
Champagne Salon — The world's ultimate "unicorn" Champagne. Created in 1905 by Aimé Salon, it produces only one cuvée "S", a single-estate Blanc de Blancs from Le Mesnil-sur-Oger Grand Cru, released only in exceptional vintage years. With an average of 3 to 4 vintages per decade and roughly 60,000 bottles per release, Salon is among the rarest and most coveted champagnes in existence.
Champagne Delamotte — Founded in 1760, the fifth oldest house in Champagne and sister to Salon. Sharing the same vineyards, facilities, and cellar master, Delamotte captures the essence of the Côte des Blancs Grand Cru terroir sourcing from Le Mesnil-sur-Oger, Avize, Oger, and Cramant with elegance and mineral purity made more accessible.

The flagship Comtes de Champagne is a Blanc de Blancs aged ten years in those historic cellars. 🏛️ About the Producer
Chris Ringland is a milestone in Australian winemaking history. Dubbed "The King of Shiraz," he crafted the 1996 Three Rivers Shiraz, the first Australian wine ever awarded a perfect 100 points by Robert Parker. To date, he has achieved five perfect 100-point scores. His core vineyard spans just 1.5 hectares of vines planted in 1910, yielding minuscule quantities, sometimes only a few hundred bottles per vintage. Top cuvées are aged for up to 60 months (5 years) in new French oak barriques, sculpting wines of monumental structure and profound depth. Despite alcohol levels reaching 18% or above from grapes harvested at extreme ripeness, his wines achieve a miraculous equilibrium.

🏛️ About the Producer
Newton Johnson is one of South Africa's most celebrated cool-climate estates, situated in the Hemel-en-Aarde Valley, a narrow corridor just behind the Atlantic coast near Hermanus, in the Walker Bay region.
Founded in 1996 by Dave and Felicity Johnson, the estate is now driven by their sons Bevan and Gordon. The valley's name means "Heaven and Earth" in Afrikaans, and its clay-rich soils and maritime influence create ideal conditions for Burgundian varieties. Newton Johnson farms across multiple sites within the appellation, producing wines that range from vibrant coastal whites to structured, terroir-driven Pinot Noir.
Their single-vineyard Windansea bottling, from a steep, wind-battered slope of decomposed granite, represents the pinnacle of their range and showcases the extraordinary potential of South African Pinot Noir on the world stage.

🌿 About Charles Heintz Vineyard
Charles Heintz Ranch sits on the second ridge in from the Pacific Ocean at 900 ft. elevation in western Sonoma County's Occidental region. Farmed by the Heintz family for 100 years and elevated by third-generation grower Charles Heintz, the vineyard has been one of California's most important sources of premium Chardonnay since the 1990s — Littorai became the first to bottle a single-vineyard Charles Heintz Chardonnay in 1994. The proximity to the ocean delivers early bud break, moderate summers, and an "Indian summer" that pushes harvest into October; the soil is Goldridge sandy loam, prized for drainage and mineral complexity. The 55-acre site is planted to Chardonnay (Clone 4, 1982), Pinot Noir (Pommard 4, 113, 115, Swan, Beringer — 1996/2000), and Syrah (Clones 174, 470, plus a Jean-Louis Chave field selection — 2002). Its client list reads like a who's who of California fine wine: Littorai, DuMOL, Williams Selyem, Ceritas, Senses, Cruse Wine Co., Flowers, Freeman, LIOCO, and more — a roster that speaks to its Grand Cru-calibre reputation.

This afternoon tasting opens six bottles that rewrite what "Champagne" really means. From pure Chardonnay Blanc de Blancs to a 20-year-old vintage, from a still Pinot Gris to a red from Bouzy with no bubbles at all.
Discover the breadth, depth, and quiet complexity that Champagne rarely gets credit for.

- Tolpuddle Vineyard (Tasmania)
Acquired by Shaw + Smith's Michael Hill Smith MW and Martin Shaw in 2011, Tolpuddle sits in the Coal River Valley — one of Australia's coolest and southernmost wine regions. The vineyard was originally planted in 1988 and has earned a reputation as a source of world-class Chardonnay and Pinot Noir with extraordinary purity and ageing potential. Often referred to as "Australia's answer to Montrachet."
- By Farr (Geelong, Victoria)
Founded by Gary Farr after decades at Bannockburn and Domaine Dujac in Burgundy, By Farr produces some of Australia's most Burgundian Pinot Noir and most refined cool-climate Shiraz. The Farrside vineyard sits on volcanic basalt soils, delivering wines of structure, depth, and unmistakable sense of place.
- Torbreck & Sami-Odi (Barossa Valley)
Torbreck's RunRig is one of Australia's most celebrated Shiraz bottlings — a Rhône-inspired blend of old-vine Shiraz and Viognier, consistently scoring 97–100 points. Sami-Odi is the personal project of former Torbreck winemaker Fraser McKinley, crafted from a single plot of century-old vines in the Hoffnungsthal sub-region, with 'Little Wine' #14 representing a radical multi-vintage blend across 10 harvests.

Founded in 1975 in Logroño, Rioja. Owner Dionisio Ruiz Ijalba planted his first vines on a reclaimed gravel pit and built one of Rioja's most distinctive estates, 90ha farmed organically on alluvial and stony clay soils. In 1998, Viña Ijalba became the first ecological winery in Rioja. They are pioneers in rescuing nearly forgotten native grape varieties such as Graciano, Maturana Tinta, Maturana Blanca, and Tempranillo Blanco and one of the only producers bottling them as single-varietal wines. Their experimental vineyard holds over 100 different varieties, seventy of which are native to Rioja.

Revived in 2018 by friends Michael Le Guellec and Arnaud Ducouet, the estate draws on family vines held since 1920, including the rare walled Clos Champ monopole (parts planted in 1930s & 1988) and Les Jeunes Rois (1965). Under Pierre Millemann's guidance, they use sustainable, organic practices and minimal intervention to express pure Gevrey-Chambertin terroir.
Winemaking is precise and gentle: cool macerations in stainless steel, minimal extraction, and thoughtfully chosen oak (around 30% new, matched plot-by-plot). Stems are used flexibly by vintage. The focus is purity, terroir and finesse with classic Gevrey power.

🍇 About Pinot Noir
Pinot Noir is one of the world's most celebrated and temperamental grape varieties, originating in Burgundy over two thousand years ago. Thin-skinned and highly sensitive to its environment, it acts as a mirror of terroir, reflecting soil, climate, and winemaking philosophy more transparently than almost any other variety.
From the limestone slopes of the Côte de Nuits to the schist terraces of Central Otago, from the volcanic soils of Hokkaido to the cool-climate hillsides of Baden, Pinot Noir rewards curiosity. It can be silky and perfumed, earthy and structured, or bright and fruit-driven but it is never boring.

🏛️ About Domaine Tinnyu
Domaine Tinnyu (田与) is a remarkable wine estate located in Shangri-La, Yunnan, China. Founded in 2021 by a duo trained in France, the domaine produces high-altitude wines from vineyards perched between 2,600 and 2,800 metres in Tibetan villages, including the village of A-Dong.
The name "Tinnyu" derives from the Cantonese pronunciation of 田与, meaning "Land and…”, a philosophy rooted in the relationship between earth and craft. The extreme altitude preserves striking alpine acidity and freshness in the wines, while regenerative agriculture principles guide the farming, eliminating synthetic chemicals to protect the local ecosystem and soils.
The estate spans 1.12 ha of hand-tended micro-parcels mapped across 14 distinct blocks. In 2021, the first lease began with 0.12 ha of Chardonnay in A-Dong Village, planted in 2008. To deepen complexity, 0.44 ha in Xi-Da Village at 2,800 metres was subdivided into eight regeneratively farmed micro-parcels. When Mei-Li-Shi Village faced relocation in 2024, 0.17 ha of Cabernet Sauvignon was planted to preserve its sun-drenched riverbank terroir. Each plot is farmed by hand and documented season by season.

🏛️ About the Producer
Domaine Dugat-Py is a legendary Gevrey-Chambertin estate renowned for its extremely old vines, many over 50–100 years and remarkably low yields that produce wines of extraordinary concentration. With minimal intervention in the cellar and whole-cluster fermentation, the domaine delivers Pinot Noir that is dark, dense, and hedonistic yet retains the terroir precision and freshness that define great Burgundy. One of the most sought-after names in the Côte de Nuits.

- Tenuta di Castellaro
Founded in 2005 on the volcanic island of Lipari, the largest of the Aeolian archipelago. Indigenous varieties Malvasia delle Lipari and Corinto Nero, first brought by ancient Greeks during Hellenic colonisation were repropagated through precise massale selection and form the heart of the estate's wines, alongside Carricante, Nero d'Avola, Moscato Bianco, Alicante, and Pinot Nero. Vines are trained in the traditional alberello system on volcanic soils, and the bioenergetic winery, the largest in the Aeolian Islands is built into the landscape with solar chimneys and a wind tower for natural light and climate control. 🍇 About Bodegas Arzuaga-Navarro
Founded by Florentino Arzuaga in the early 1990s, Bodegas Arzuaga-Navarro is rooted in La Planta estate, a sprawling 1,500-hectare nature and hunting reserve in Quintanilla de Onésimo, in the heart of Ribera del Duero. Within the estate lie 150 hectares of prime vineyards planted with Tempranillo, Cabernet Sauvignon, Merlot, and Chardonnay, alongside the family residence and a preserve home to deer, wild boar, and mouflon.
Situated at 900 metres above sea level along Ribera del Duero's celebrated "Golden Mile," the vineyards benefit from a unique microclimate with sharp sunlight by day and cool, humid nights over limestone and clay soils atop limestone bedrock. These conditions are the defining ingredients behind Arzuaga's hallmark quality and freshness.
The family also owns vineyards in Malagón, Ciudad Real, where the acclaimed Pago Florentino wine is produced. Through decades of passionate work, Bodegas Arzuaga-Navarro has become one of the most prestigious names within the Ribera del Duero Denomination of Origin.

🍇 About Georgian Wine
Georgia is widely regarded as the cradle of wine, where the ancient Qvevri method—fermenting and aging wine in large clay vessels buried underground—has been practised for millennia and is now recognised by UNESCO as Intangible Cultural Heritage. Indigenous grape varieties such as Rkatsiteli, Kisi, and Saperavi produce wines of remarkable character, from skin-contact amber whites to deeply structured reds. Today, a new generation of Georgian winemakers honours these ancient traditions while embracing modern techniques, creating wines that are both timeless and thrillingly relevant.

🍇 About Domaine Hubert Lamy
Established in 1973, Domaine Hubert Lamy draws on a family legacy in Burgundian viticulture dating back to 1640. The estate transformed under Olivier Lamy, who joined in 1995 and soon ceased selling grapes to négociants, focusing exclusively on the finest vineyard sites across 18.5 hectares in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet, and a prized parcel in Criots-Bâtard-Montrachet Grand Cru.
Olivier's revolutionary Haute Densité cuvées, planted at up to 30,000 vines per hectare, produce wines of extraordinary concentration. In the cellar, larger barrels (350L and 600L) and extended 90-day fermentations preserve freshness and complexity. The result is Burgundy at its most thrillingly pure.

The Bellaria Estate first came into being in September 1963, when Assunto Pieri and Bruna Tempori purchased a farmhouse and land in one of the finest and most characteristic Montalcino winegrowing areas. The Rosso di Montalcino DOC "Bellaria" is a great Italian red wine, considered by many to be Brunello di Montalcino's "little brother". Made from 100% Sangiovese grapes, bunches are harvested, selected and fermented in stainless steel vessels at a controlled temperature for 15-20 days. Maturation takes place in small oak barrels for 12 months, followed by 3 months of refinement in the cellar after bottling.

🏛️ About Familia Nin-Ortiz
Founded in 2008 by legendary winemaker Ester Nin, former goddess of Priorat's famed Clos Erasmus, Familia Nin-Ortiz has become one of Spain's most acclaimed small producers. Ester's debut flagship Nit de Nin scored 98 points from Robert Parker, with the 2020 vintage achieving a perfect RP 100.
The estate owns 11 hectares of vineyards, with vines reaching 110–120 years old, cultivating Garnacha, Carignan, Roussanne, Marsanne, Chenin Blanc, and the rare Garnacha Peluda. As the first in Priorat to adopt biodynamic practices, Ester employs extended macerations of up to four weeks, clay amphorae, and used oak barrels to craft wines of extraordinary purity. With only 20,000 bottles produced annually, each wine is the ultimate expression of terroir and craftsmanship🍇

🍇 About Domaine Zuria:
Initiated in 2010 to restore vine growing around Bonifacio in the extreme south of Corsica. Now led by Nadine and Christian, in association with Yves Canarelli, the estate conducts research on different terroirs, soils, and native grape varieties to replant an entire vineyard. The first vintage was born in 2016.
The cellar sits in the heart of Bonifacio, while the 13 hectares of vines are split across several parcels such as Stintinu, Musella, Spinella, and Santa Giulia, providing a variety of terroirs. Currently undergoing biodynamic conversion, the estate focuses on indigenous varieties Sciacarellu and Vermentinu, while also reviving forgotten grapes to support the blends.
